  • 2 – Mangos
  • 1 – Lime
  • 1tsp – Honey
  • 1/2 – Jalapeno Pepper, Seeded & Minced
  • 1 – Red Bell Pepper
  • 1/4 Cup – Chopped Fresh Cilantro
  • 1/4 – Red Onion
  • 1 Cup – Jasmine Rice
  • 1 Cup – Water
  • Salt ( To Taste )
  • 1 Cup – Coconut Milk
  • 1 – Lime
  • Salt & Papper ( To Taste )
  • 4 – Boneless Chicken
  • 1/4 Cup – Barbecue Sauce

Next step to make Sunday chicken dinner ideas, now there is just so much to love about this recipe but I have to say my favorite part about it is all of the amazing colors which starts with some gorgeous mango so I’ve got some mango nice and finely diced in my bowl I have to be honest with you guys the reason I’m making this recipe for you today is actually that I had a couple of mangoes that were about to go bad and I really wanted to make sure I used them before they did so this is a great recipe to do that to my mango I am going to be adding some chopped red pepper I love the red bell pepper because it adds a ton of gorgeous crunch and great color

Next step to make Sunday chicken dinner ideas, I’m going to be adding some finely diced red onion some chopped cilantro, and a little bit of minced jalapeno the jalapeno in this recipe is definitely optional but if you like your food with a little bit of a kick which of course I always do I highly recommend you add it once all of that yumminess is in my bowl I’m going to go ahead and add the juice of one lime here as well as about a teaspoon or so of honey I just want to add a touch of sweetness to this salsa to make it really wonderful

coconut rice guys really couldn’t be simpler I am starting here with some jasmine rice but you could just as easily use some traditional white or brown rice in this recipe if you wanted to my rice I am going to be adding some coconut milk I’m using full fat coconut milk you could swap in some light coconut milk here if you want to definitely up and then I’m also going to add some water to this finally just a good sprinkle of salt you really want to make sure that your race is nicely seasoned I’m just gonna give this a quick mix up and then we are going to let our rice come to a boil as soon as it’s reached a boil I am going to reduce my heat to low pop a lid on my pot and let it cook away for between 15 and 20 minutes or until all of that liquid has been absorbed

In the meantime I am going to get to work on cooking up my amazing barbecue lime chicken now traditionally I would do this on my barbecue outdoors but since we are in the kitchen today I’m going to be doing this on a grill pan on the stove now for this recipe I am using some boneless skinless chicken thighs you could definitely use chicken breasts here that would work just as well now I have my chicken laid out on a plate and I’m just gonna season it up with some salt and some pepper we’re keeping our seasoning really really simple because we’re going to be as saucing this with some barbecue sauce once it’s cooked through as soon as our grill pan is nice and hot we can go ahead and get our chicken fuzz into the pan I’m going to be doing these four at a time if you need to go ahead and cook your chicken in batches that are totally fine

once our chicken is in the pan we can season up the other side liberally with more salt and more pepper and then we’re just gonna let these cook away for say four to five minutes we want to make sure they get some nice grill marks happening and they start to really cook through on the first side then we’ll flip them and cook them on the second side

Next step to make Sunday chicken dinner ideas, now it’s time to flip our chicken you can see it’s getting nice and brown it’s releasing easily from the grill which is always a good sign and that means it’s time to let this cook on the underside for another say three to four minutes and while that’s happening we are going to mix up a really simple barbecue lime sauce for this so I’m starting with just some classic store-bought barbecue sauce you can use really any kind of barbecue sauce you want in this recipe and I’m just going to add another dimension of flavor to it by adding a nice big squeeze of lime juice so what I love about barbecue sauce is that it’s sweet and tangy sometimes it’s a little bit smoky and by adding just that little bit of lime juice you sort of brighten it up a little bit added a little bit of citrusy flavor to it and make it just a little more tart

at this point, our chicken is just about done cooking which means it is time to get our sauce on it now I always recommend if you were using barbecue sauce on a grill if you use it at the very end of cooking unfortunately because of the high sugar content and barbecue sauce it tends to burn if you leave it on the grill for too long at this point we want to flip our chicken thighs over and let them continue cooking until they reach a space internal temperature of a hundred and sixty-five degrees Fahrenheit on a meat thermometer really is the only surefire way to know if your chicken is done completely

Roast Chicken with Mushroom Rice

  • 2tbsp – Chopped Fresh Parsley
  • Salt & Papper ( To Taste )
  • 8 – Chicken Thighs
  • 1/2tsp – Dried Basil
  • 1/2tsp – Dried Thyme
  • 1/2tsp – Dried Oregano
  • 4 Cups – Sliced Mushrooms
  • 1tsp – Garlic Powder
  • 3tbsp – Butter
  • 2 – Garlic Cloves
  • 1 – Shallot
  • 1 Cup – Frozen Peas
  • 1 – Bay Leaf
  • 1 Sprig – Fresh thyme
  • 3 Cups – Chicken Broth
  • 1/3 Cups – White Wine
  • 11/2 Cup – Arborio rice

Next step to make Sunday chicken dinner ideas, it all starts by seasoning up our thighs I’m doing that with some really simple dried herbs and spices so I’ve got a bit of oregano headed on here now I love dried herbs in this kind of cooking because they don’t burn the way fresh herbs do and these are going to be in the oven for at least say 35 to 40 minutes so you don’t want your fresh herbs for a name then I’ve got some dried basil and we don’t have to get fancy here guys you can really use any herbs and spices that you want whatever is in your pantry is going to work

then I’ve got my dry thyme headed on here I’ve got a good helping of garlic powder now you guys know how much I love fresh garlic in the kitchen but fresh garlic loves to burn especially if you’re using minced garlic so dried garlic powder is a great alternative if you’re doing up in cooking don’t worry there will be plenty of fresh garlic in our creamy mushroom risotto I promise I’m going to hit these with a little salt and a little pepper and then I’m going to get them into a preheated oven at 375 degrees Fahrenheit for between 30 and 40 minutes or until it reaches a safe internal temperature of a hundred and sixty-five degrees Fahrenheit on a meat thermometer

in the meantime we are going to get to work on preparing our amazing creamy mushroom risotto and it all starts of course with some mushrooms so I have got about 4 cups of mushrooms that are sliced and I’m using cremini mushrooms here white button mushrooms would definitely work if those are what you had on hand even portabellos would be fine here and I’m just gonna get started by cooking my mushrooms in a little bit of butter and you guys know by now how I feel about melted butter kind of my favorite thing I am using a nice big skillet it’s important that your skillet have a tight-fitting lid because we are going to be cooking our rice in the skillet with all of this flavorful mushroom goodness now this is technically what I call a cheater risotto and the reason for that is a traditional risotto is made by stirring constantly between 25 and 30 minutes and adding your broth slowly but surely in batches honestly I love risotto but I rarely have the patience for that sort of thing so instead I make a bit of a cheater version that is just as delicious I think and still totally creamy

so as soon as our butter is melted in our skillet we’re gonna go ahead and get our mushrooms and now at first it’s going to feel like a lot of mushrooms but we know that a lot of mushrooms becomes just a little mushroom very very quickly as mushrooms tend to shrink during the cooking process so not to worry if it feels like your pot is being overwhelmed by mushroom you’re going to see they’re going to lose a ton of their volume and cooking I’m gonna hit them at this point with just a little salt and pepper and then let them cook away for about five minutes or so maybe five to seven minutes just until they start to release their moisture and they start to get nice and golden

you can go ahead and actually remove them from the pan not to worry we’re going to be adding them back in a little later but first we want to get our rice cook so I’m gonna take them right out and just transfer them to a bowl I’m going to get another pat of butter into my skillet and let that melt as soon as that butter is nice and frothy and foamy we’re going to go ahead and get some she´ll it into our pan will let that shallot cook up for maybe a minute or so if you don’t have shallot go ahead and use onion hair this is a very very versatile at recipe a there’s no wrong answer the

The next ingredient we’re going to be adding is garlic and a whole lot of it come on guys the best part about social distancing is that you can basically eat all of the garlic you want and no one’s really gonna mind we’re gonna let our garlic cook up until it’s nice and fragrant and aromatic and that means it is time to add our rice to the skillet

Next step to make Sunday chicken dinner ideas, now in this recipe I am using some arborio rice or short grain rice I really love it because it gets a nice creamy texture during the cooking process if you only have traditional white rice to use in this recipe you definitely can use it not to worry like I said this recipe is super versatile once that rice has hit the pan you’re going to let it toast up for just a minute or two you want to make sure you’re stirring it constantly so it doesn’t burn but what’s going to happen is it’s going to take on a bit of a nutty aroma and you’re going to see it become a bit translucent that means it’s time to get some liquid into our skillet I am going to start by adding a good splash of white wine here now if you are not into cooking with wine that is totally fine you can totally skip this step and just add your chicken broth here I find the wine adds a little bit of extra flavor which is why I like to use it I’ve received a couple questions lately about what kind of wine I usually use in cooking and the honest answer is whatever one I have at home usually in cooking you want to opt for a dry wine that’s a little bit acidic so this is a Sauvignon flawl you could use a Pinot Grigio instead but really most wines will do 

Step 8

basically, all we want to do is give that wine some time to evaporate so you’re looking at two to three minutes and those flavors are going to concentrate and get really really yummy then you can go ahead and add your broth to this I’m using chicken broth but the vegetable broth is another great option I’m also going to be flavoring this yummy rice with some fresh herbs so I’ve got some thyme here as well as a bay leaf if you do not have fresh herbs on hand do not sweat it go ahead and use dried you’ll still a really tasty dish 

we just want to let this mixture come to a boil and as soon as we see those bubbles just breaking the surface you want to reduce your heat to low pop a lid on this and let it cook away for between 15 and 20 minutes my friends we are in the promised land so as you can see all of our liquid has been absorbed we can remove our bay leaf and our time now because they have done their amazing work just discard those and as you can see there’s no more liquid in our pan our rice is nice and tender and now it’s time to really bring it all together and watch the magic happen

our first step is going to be adding our mushrooms right back into our Amazing Race we’re also going to be adding some parmesan at this point now the parm in this recipe is optional but I will just say it is absolutely delicious we’re just gonna stir that in and what you’re going to start to see is a nice creamy texture happening and that is the parmesan working its magic for a little extra greed in this dish I’m also going to be stirring in some peas I’m using frozen peas I haven’t even seen them just going to get them right into the pan and that heat will heat them through I’ve also got a little bit of freshly chopped parsley to round out all of these flavors we’ll hit this with just a little salt and a little pepper and my gosh guys this yumminess is ready to be served up which is a very good thing because let’s be honest we’re all hungry around here Bon Appetit.
