Hey lovelies so as you know each and every week I am here to make your lives in the kitchen easier which is why all month long I’m sharing one dish dinner ideas that will do just that


One Pan Garlic Shrimp and Asparagus

Today’s recipe is super yummy and takes no time to prepare it’s my yummy one pot garlic shrimp and asparagus and let me tell you it is oh so good and comes together in less than 30 minutes 

Simple Weeknight Dinner Recipes | One Pan Garlic Shrimp and Asparagus

Ingredients for garlic shrimp and asparagus

Ingredients –

  • 1/4 Cup – Fresh Parsley
  • 2 tbsp – Butter Or Olive Oil
  • 1 – Lemon, Zested, and Juiced
  • 3 – Cloves Garlic, Minced
  • 1 Bunch – Asparagus, Cut in Thirds
  • 1½ Cup – Quinoa
  • 1lb – Raw Shrimp, Peeled and Deveined
  • 2½ Cups – Chicken Broth 
  • 1/2 Cup – White Wine (Optional)
  • 1/2 Tsp – Red Chilli Flakes
  • Salt and Pepper


How to Make garlic shrimp and asparagus

Directions –

Step 1

Without further ado let’s get to some one-pot garlic shrimp and asparagus this recipe all starts with some butter melting in a skillet on the stove that is one of my favorite sights and sounds truly 

Once that butter is completely melted it’s time to add some minced garlic to the skillet to get that heated through 


Step 2

Next, I’m going to be adding some quinoa some broth and a little bit of white wine now if you don’t drink or you’re too young to drink

It’s totally fine you could just replace the wine with some additional brah but I think the wine adds a nice flavor to this dish then we are going to bring this mixture to a boil 


Once it reaches a boil I’m going to turn my heat down to medium-low put the lid on my pot and let this simmer away for between 15 and 20 minutes or until almost all of the liquid has been absorbed


Step 3

Once my quinoa is cooked through I’m going to add some peeled shrimp to my skillet with some asparagus that I just cut into thirds I’m going to put the lid back on my pot and let this cook for another three or four minutes or until that shrimp turns bright pink and opaque 


Step 4

I’m going to finish this off simply with some red chili flakes some lemon juice and some freshly chopped parsley season it with some salt and pepper


How long does garlic shrimp last?

There you have it one pot dinner is served what is not to love about this recipe it is super super tasty and will last in the refrigerator for two or three days so go ahead and make a big batch because it’s really delicious for lunch as well I hope you’ll give this recipe a try 


Easy Chicken Parmesan

Next, as most of you know one dish dinners are a quick and effortless option for busy weeknight today I’ve teamed up with frigidaire gallery to show you one of my favorite Wendish dinner ideas easy chicken parmesan this recipe is simple inexpensive and makes cleanup a total breeze it also happens to be incredibly delicious

Ingredients for Parmesan Chicken

Ingredients –

  • 1/4 Cup – Parmesan Cheese, Freshly Grated
  • 1 tbsp – Olive Oil
  • 1 Cup – Mozzarella Cheese, Grated
  • 4 – Boneless Skinless Chicken Breast Fillets 
  • 4 Cup – Baby Spinach, Chopped
  • 1 – Small Onion, Finely Diced
  • 1 tbsp – Italian Seasoning
  • 1 Clove – Garlic Minced
  • 1 28oz – Can Diced Tomatoes
  • 1lb – Penne Pasta 
  • 2½ Cups – Chicken Broth

How to Make Parmesan Chicken

Directions –


Step 1

For this recipe, I’m getting started with a large oven-safe skillet on the stove and I’m just going to heat up some olive oil over medium-high heat

Next, I’m going to get my chicken breasts in the pan top side down for about three to four minutes now you could bread this chicken that would be a more traditional take on this recipe but I’m lightening things up a bit by leaving them as they are you’ll know the chicken is ready to flip when it releases easily from the pan don’t rush it or you’ll end up shredding your chicken trust me I have learned this the hard way over the years 


Step 2

We’re going to cook the other side of the chicken for another three minutes or so and then we’re going to remove the chicken from the pan and saute some onions once those onions are nice and soft and translucent we’re going to add a few cloves of minced garlic we’re gonna cook that garlic for another thirty seconds or so until it becomes nice and fragrant


Step 3

Then it’s time to add our liquid so to this we’re going to be adding some chicken broth some diced tomatoes some penne pasta and some Italian seasoning we’re going to bring this whole mixture to a boil and then reduce our heat to medium-low and put the lid on we’re going to let our pasta simmer away covered for about 15 minutes you’ll want to stir the pasta every three or four minutes though because it does love to stick


Step 4

In the meantime, I’m going to preheat my oven to 400 degrees because that’s where we’re going to be finishing this dish off after 15 minutes your pasta should be nice and soft and fully cooked it’s time to stir in some spinach and then add our chicken back into the pan


Can Chicken Parmesan be Frozen?

Yes, you definitely freeze easy chicken parmesan


Step 5 

I’m going to top all of this yumminess with some shredded mozzarella cheese and a sprinkle of freshly grated Parmesan and then into the oven it goes while that’s baking away I’m going to get to work on a quick cleanup what I love about cooking with an induction stove is that it’s super easy to clean because the surface stays cool so spills don’t burn after 10 or 15 minutes your chicken should be at an internal temperature of 165 degrees Fahrenheit 

We’re going to finish it off with some freshly chopped basil and a sprinkle of freshly grated Parmesan and it is ready to enjoy that cheese is fully and gooey and melted and delicious the chicken will be perfectly
