Hey lovelies this time of year as so many of you are heading back to work and back to school after what I hope was a really restful
Summer, I get asked all the time for new meal prep ideas and as always your wish is my command today I am sharing this absolutely incredible rainbow salad meal prep
What to Eat for Lunch at Home
Now this is not just any ordinary salad it is packed with protein and fiber and good for you ingredients that you guys are going to absolutely love not to mention the fact that it looks totally delicious thanks to all of those gorgeous rainbow colors
Rainbow Salad
Now without further ado let’s get to making this incredible salad
Rainbow Salad Ingredients
Ingredients –
- 2 tbsp – Chopped Fresh Parsley
- 3 tbsp – Fresh Avocado Oil
- 1/4 – Red Onion, Finely Diced
- 2 tbsp – Apple Cider Vinegar
- 1 – Red Bell Papper, Diced
- 1 tsp – Honey
- 1 Cup – Matchstick Carrot
- 1 tsp – Dojon Mustard
- 1/2 Cup – Corn Kernels
- 2 Cups – Cooked Quinoa
- 1 Cup – Shredded Red Cabbage
- 1 – 19oz Can Chickpeas, Drained and Rinsed
- 1 – English Cucumber, Diced
- Salt and Freshly Ground Black Pepper
How To Make Rainbow Salad
Directions –
Step 1
Now in my bowl, I am starting with some avocado oil but you can pretty much use any flavorless oil you want to even olive oil will work in this recipe, and to that, I’m going to add some apple cider vinegar and some honey for sweetness really complementary with the ingredients that are going to be going into this salad
If you don’t have honey you could also use maple syrup or agave in this recipe both would totally work
Step 2
Then finally I’m gonna add some dijon mustard which adds just a little bit of tang and is gonna help our dressing emulsify I’m gonna hit this with some salt and some pepper and honestly guys that’s it really really simple but really flavorful
Now I’m just going to set my dressing aside and get to work on mixing up my salad
Now I should warn you this salad does come with quite a bit of chopping but honestly, I chopped pretty much everything here in under 10 minutes, and then when it comes time to assemble it’s really just a matter of dumping it all into a bowl
Step 3
Now the base for this salad is some cooked quinoa so I cooked my quinoa and I cooled it you can skip the quinoa in this recipe if you want to but I love it because it adds a nice hit of protein here and some additional fiber I’m gonna go ahead and add some chickpeas to this salad so chickpeas are of course amazing for so many reasons
Then we want to start adding some really beautiful color crunch and nutrition to start I’ve got some lovely cucumbers headed into my bowl
Step 4
Next, I’ve got some red cabbage one of my all-time favorite ingredients I like to shred it really finely just adds such gorgeous color to everything I also have some corn here this is frozen corn that I just thought out you could use fresh if you have it
I’ve also got some shredded carrot headed into my bowl as well as some red bell pepper that I’ve chopped up pretty fine
Rainbow Salad Dressing
Now a lot of people would add tomato to this for that gorgeous red color but I find tomato doesn’t usually meal prep as well as something like red bell pepper here I chose to go with really hearty veggies that could stand up to that dressing over a few days in the fridge so red bell pepper is the choice I made
Step 5
Next, I’m going to add a little more color and some more flavor with a little bit of red onion you could skip the red onion if you have any important meetings no problem at all
Finally, I’ve got a nice big handful of freshly chopped parsley the parsley really brightens up the flavors in this salad and it’s one of my favorite ingredients so don’t skip it
Step 6
The final step here is going to be adding that gorgeous apple cider vinaigrette love so much and now it’s just a matter of tossing it all together and honestly in this bowl you’ve got a rainbow’s worth of nutrition that’s super filling yummy and satisfying
I’m gonna separate it into my meal prep dishes and honestly, guys lunch is taken care of for the week what could be better
What’s so amazing about this salad is that the longer it sits in that dressing the more delicious it’s going to become so you can feel free to prepare it on Sunday and enjoy it Monday Tuesday Wednesday Thursday it’s super yummy and super versatile if you don’t have these vegetables on hand you could pretty much use any veggies that are in your fridge so let’s just say there is a lot to love in here me
