Hi, lovelies if you’re wondering what’s for lunch this week well I have you covered with this absolutely incredible easy chipotle chicken recipe it is bursting with flavor it’s so good on things like tacos or in burritos and of course perfect in this meal prep bowl it has a ton of great nutrition and it is so easy to make in fact this whole meal prep comes together in under 30 minutes.

Ingredients for Chipotle Chicken
- 2 Cups – Cooked Brown Rice
- 1 tbsp – Oil
- 1 – Lime Juice
- 1 lb – Ground Chicken
- 2 tbsp – Chopped Fresh Cilantro
- 1 – Yellow Onion, Diced
- 1/2 – Jalapeno Pepper, Deseeded and Finely Diced
- 1 tbsp – Chili Powder
- 1/4 – Red Onion, Finely Diced
- 1 tsp – Garlic Powder
- 1 – Red Bell Pepper, Diced
- 1 tsp – Dried Oregano
- 2 Cups – Corn Kernels
- 1 – Chipotle Pepper In Adobo Sauce, Chopped
- 2 tbsp – Tomato Paste
- 1 Cup – Chicken Broth
- Salt and Pepper to Taste
How to Make Chipotle Chicken
now the first step today is going to be preparing my chipotle chicken this stuff is incredible on everything from tacos to burritos or honestly you can just eat it with a spoon it’s so super flavorful now I’ve got some oil heating up and a nice big skillet on my stove and to that, I’m going to be adding some ground chicken.
now I’ve opted for ground chicken in this recipe it’s very lean it’s pretty affordable but the truth is you could use pretty much any ground meat you wanted in this recipe if you wanted to try this instead with ground turkey ground pork or ground beef you definitely could do that it’s a really versatile dish so you’ve got tons of great options.
while that’s cooking away I want to season this up liberally with some salt and some pepper and I’m just going to cook it until it’s no longer pink just as soon as that chicken is just cooked through we’re gonna go ahead and add onion to this so I’ve got half an onion headed in here that I’ve diced up and I’m gonna let that cook up for another say two to three minutes just until that onion starts to soften.
now just as soon as that onion has had a chance to soften up it’s time to start building in the flavor here to do that I’m going to be adding some chili powder I’ve also got some garlic powder and some dried oregano headed in here as well now the secret to making this dish really incredible in my opinion is the addition of a chipotle pepper if you’re not familiar these are really smoky and just a little bit spicy but they are super flavorful.
now if you want to keep this a little more family-friendly if your kids are not such fans of the heat go ahead and skip the chipotle pepper and add some smoked paprika here instead because you definitely want to have that nice smoky flavor but the smoked paprika will give you that flavor without any of the additional heat.
in my case, this is going to be all mine for lunch this week so I’m going for it with the chipotle peppers you can add one two three it all depends on how spicy you like your food.
Now I’m just going to stir this all in and basically, all we really want to do here is give these spices a chance to activate to really sort of maximize their flavor we’re just going gonna let them cook up for 30 seconds to a minute that’s really all it takes for them to get extra delicious.
now at this point, you may notice your pan is a little bit on the dry side especially if you’re cooking with ground chicken or ground turkey which is a little leaner so they don’t have as much fat which means they don’t have as much moisture as say ground pork or ground beef and that’s why I want to go ahead and add some moisture to this with a nice big splash of chicken broth.
I’m also going to add even more great flavor and richness to this with just a couple tablespoons of tomato paste so that tomato flavor mixed with that chicken broth is just going to give you this really rich sauce at this point I’m just going to reduce my heat to medium-low and I want to let this simmer away until the liquid has been evaporated and all that’s left is that amazing flavor.
Guys this is going to be so good honestly I wish you could smell it it’s got this incredible smoky aroma that is super mouth-watering and I cannot wait to dig in so as if this yumminess wasn’t already packing enough great flavor.
What’s the Best Salsa at Chipotle Chicken
I’m going to be balancing out that smokiness with a little bit of sweetness courtesy of some delicious corn salsa you’re not going to believe how simple this is to make now in my bowl I am starting with some corn kernels I’m using frozen corn that I just thawed but if you have fresh corn on hand you can definitely use that instead super super tasty.
Next to that, I’m going to add some beautiful color and a little crunch with some red bell pepper and a little bit of finely diced red onion
I’m also going to be adding some minced jalapeno to this the jalapeno is definitely optional if you don’t like the spice you can always leave it out but like I said I am enjoying this dish kid free this week so I’m gonna really go for it with the spice.
I’ve also got some finely chopped cilantro headed in here if you want to skip the cilantro and stick with parsley instead that’s totally fine or you can just leave the fresh herbs out entirely it’s really up to you
Then we are just going to finish this off with some nice bright fresh citrusy lime juice and honestly guys that’s it I’ll give this a really good stir and this corn sauce that is ready to be devoured with that beautiful smoky chipotle chicken I’m gonna be serving this up on some brown rice this week but you could serve it with white rice quinoa cauliflower rice or even just pile it on top of a salad if you wanted to there are lots of amazing ways to enjoy it.
