Easy Chicken Recipes for Lunch

Hello lovelies as you guys know all month long I am sharing easy chicken recipes for lunch to make your life in the kitchen a little easier as you head back to work and back to school and today is no exception we’ve got three awesome chicken recipes for you keep in mind all of these tasty recipes.

Smoky Spanish Chicken

let’s get to today’s dinner recipes starting with this incredible smoky Spanish chicken this recipe it’s kind of like a chicken cacciatore but with a bit of a smoky twist

Ingredients –

  • 4 Cups – Chopped Baby Spinach
  • 1 tbsp – Oil
  • 1 – 19oz Can Fire-Roasted Tomatoes
  • 6 – Chicken Thighs
  • 1 tbsp – Smoked Paprika
  • 1/2 – Spanish Onion, Diced
  • 2 – Garlic Cloves, Minced
  • 1 – Yellow Bell Pepper, Diced 
  • 1 – Red Bell Pepper, Diced
  •     Salt and Pepper to Taste

Directions –

Step 1

I’m gonna start by getting a little oil in a nice big skillet on the stove for this recipe I am using some chicken thighs I’ve got the bone-in and the skin on here you could use boneless skinless chicken breasts or thighs here if you wanted to but I really think that these have a ton of great flavor once my oil is nice and hot 

I’ll get my chicken thighs into the pan skin side down for between four and five minutes I really want to give them a chance to get nice and golden and crisp on one side and then we’ll give them a flip and let them cook up for another two to three minutes.

Step 2

On the next side now that our chicken is browned we can remove it from the pan and set it aside on a plate well we get to work on our saucy goodness for this recipe to that very same skillet I am going to add some Spanish onion as well as some bell pepper I’m using a combination of red and yellow here but any bell pepper will do I’ll let those cook up and tell they’re slightly softened maybe two to three minutes 

 

Step 3

Next, we’ll add some garlic to the pan and then we are going to be adding our most important ingredient in this recipe it is our smoked paprika now you can find this usually in the spice aisle at your supermarket you want to make sure that you are looking for smoked paprika instead of traditional paprika because it’s got this incredible smoke flavor that is really the hallmark of this dish we just want to give that garlic and that smoked paprika a chance to get really really warm and flavorful

 

Step 4

Then we can go ahead and add our diced tomatoes to the pan I’m using fire-roasted diced tomatoes because I find may have a really really nice flavor but if you can only find plain diced tomatoes those will work as well and the last thing I’m gonna add to this because we know how important it is to get our greens in is some spinach we’re just going to bring this mixture to a simmer stirring it until that spinach starts to wilt down and everything starts to bubble that means it is time to add our chicken back into the pan to fully finish cooking

Step 5

We’ll let this simmer away for between say 5 and 10 minutes or until that chicken registers 165 degrees Fahrenheit on a meat thermometer as you can see this recipe takes very little effort but is really big on the flavor you could serve this up with some rice or some potatoes or just a nice green salad totally up to you it is really versatile and makes wonderful leftovers.

 

Honey Dijon Chicken

Next guys I’ve got an absolute classic for you it’s my honey mustard chicken and I love using it on something like boneless skinless chicken breast which don’t traditionally have a lot of flavor of their own

Ingredients –

  • 1 tsp – Fresh Thyme Leaves
  • 4 – Boneless Skinless Chicken Breasts
  • 1/4 Cup – Dijon Mustard
  • 1 tbsp – Oil
  • 1/4 Cup – Honey
  • 1 – Yellow Onion, Diced
  • 1 Cup – Chicken Broth 
  • 1 – Garlic Clove, Minced
  •     Salt and Pepper to Taste

Directions –

Step 1

To get started I’m gonna season up my chicken breast with a little bit of salt and a little bit of pepper and then I’ve got some oil heating up and a skillet on the stove

I’m gonna get my chicken into the pan and brown it on both sides similar to what we did in our first recipe well this is upside down it’s a good time to season up the other side because you know we eat both sides so it’s important to season both sides

Step 2

Once our chicken is browned on both sides we can simply remove it from the skillet and cook up some finely diced yellow onion you want to cook that up until it’s nice and soft it should only take a minute or two with all that heat 

once my onion is softened I’m gonna go ahead and add some garlic to this as well the Gerlich only takes 30 seconds or so to reach its maximum flavor potential

 

Step 3

Once that garlic is nice and fragrant I am going to add some chicken broth to this so the chicken broth is going to be the base for our sauce we’ll just use the chicken broth to sort of scrape those brown bits off the bottom all of those brown bits are flavor so we want to make sure that they end up in our final sauce

Step 4

Then as soon as my chicken broth starts to simmer you can add in the two most important ingredients in our honey mustard chicken honey and mustard I’m using grainy Dijon mustard in this recipe but any mustard will really do here 

I like adding some fresh thyme to this mixture for just a bit of earthiness now you’ll see this is going from soupy to syrupy which means it is time to get our chicken in we want to basically coat our chicken by flipping it a couple times in this yumminess you want to make sure that you get ample flavor on all sides

Then we’ll just let it simmer away over medium heat just until your chicken has reached an internal temperature of 165 degrees Fahrenheit on a meat thermometer and you can serve the chicken up covered in this amazing sauce 

this stuff is so so tasty guys it’s perfect for dinner served up with some roasted potatoes but I also love it for lunch over a salad

 

Easy Coconut Chicken Curry

Finally my lovely is if flavor is what you are looking for then you have come to the right place because this coconut curry a chicken is so packed with deliciousness you’re going to want to eat it every single day and for those of you who have never tried making your own curry but you’re a bit curious this is the perfect recipe 

Now for this recipe I’m actually using some boneless skinless chicken thighs that I’ve cut into cubes you could do this with boneless skinless chicken breast as well I find the thighs are a little more flavorful and a bit more tender so that’s why I like to use them

Ingredients – 

  • 2 tbsp – Chopped Fresh Cilantro
  • 1 tbsp – Coconut Oil
  • 2 tbsp – Brown Sugar
  • 6 – Boneless Skinless Chicken Thighs, Diced
  • 114- Ounce Can Coconut Milk
  • 1 – Red Bell Pepper, Diced
  • 1 tbsp – Curry Powder
  • 1 – Yellow Onion, Diced
  • 2 tbsp – Red Curry Paste
  • 1 – Garlic Clove, Minced
  • 1 tsp – Freshly Grated Ginger

Directions –

Step 1

I’m starting once again with a nice big skillet on the stove and I’ve got some coconut oil headed in there on medium-high heat as soon as my coconut oil is melted I’m gonna go ahead and add my chicken into the pan I’m gonna season that with some salt and some pepper and let it cook away until it’s nice and golden on all sides

Step 2

Now that my chicken is cooked through I’m going to start adding some veggies in so I have got some bell peppers in here then it’s time to really pack in the flavor and to do that I am using the trifecta of delicious ingredients that are classic in any curry onion garlic and ginger and oh my gosh when all of that hits the pan your nostrils are just filled with so much yumminess and that’s when you know it is time to pack in even more flavor into this dish.

 

Step 3

For this recipe, I’m actually using a combination of red curry paste as well as some curry powder usually you use one or the other but I want to make this extra flavorful and for some reason using the two together it just makes magic happen don’t believe me you really have to try this one for yourself

 

Step 4

Now you really just want to give those ingredients a minute or so on that heat to develop their best flavor then you can go ahead and add your coconut milk to this is not a place for low-fat coconut milk you want to go for it with the good stuff it just adds a ton of great richness to this and it is definitely worth the calories lards I think

Step 5

Finally we’ll hit this with just a touch of brown sugar give it all a stir and let it simmer away now this is a recipe that I would consider a quick curry so you really only need to let it simmer for maybe five to ten minutes of course as with any curry the longer it cooks the better it is but I promise you if you only let it go for five minutes or so it’s still gonna be really yummy for the finishing touches in this gorgeous Korea we have a little bit of lime zest and juice headed in here we want to add some freshness to this 

Now that it’s really warm and toasty and spicy and then I just serve it up simply over some rice with some fresh cilantro and my gosh guys that is a dinner made easy the best part about being the cook is always getting the first taste with all of that garlic and ginger this is sure to curry what else yeah
