Hey guys as you know all week long I am celebrating the arrival of spring with some delicious brunch ideas I asked you guys a few weeks ago what kind of brunch ideas 

I got over and over again was about vegan brunch ideas which of course can be really hard to find because a lot of brunch ideas

 

Vegan French Toast Recipe

Incorporate eggs so today I thought it would be fun to show you a French toast that is actually totally vegan this french toast is sweet and cinnamony and I’m serving it with some fresh homemade strawberry sauce what is not to like about that

Ingredients –

  • 3/4 Cup – Coconut Milk
  • 1 tbsp – Coconut Sugar (Optional)
  • 1 – Ripe Banana
  • 2 tbsp – Lemon Juice, Freshly Sequined
  • 2 tbsp – Ground Flax Seed
  • 2 Cups – Strawberries, Trimmed and Chopped
  • 1 tsp – Vanilla Extract
  • 1-2 tbsp – Coconut Oil (For Frying)
  • 1/2 tsp – Cinnamon

Directions –

 

Step 1

For easy breakfast recipes with eggs , I’m going to start by mixing up the dip for my french toast and to do that i’m actually going to be using my blender so what i’m starting with is some coconut milk you could also do this with almond milk if you wanted to keep it on the lighter side but I find that the coconut gives it a nice richness which of course is always welcomed at brunch

Step 2

Then I am using a ripe banana of course the riper your banana the sweeter this french toast is going to be then I’m going to add a few tablespoons of ground flax seed which actually acts a lot like egg in a dish like this

For easy breakfast recipes with eggs , I’m going to flavor this with a little splash of vanilla extract and some cinnamon and then we’re just going to put on our lid and blend it all up

I’m just going to transfer this mixture into a shallow dish and it’s time to start dipping for this recipe I’m using a really simple vegan loaf but you can go ahead and use whatever kind of bread you want 

 

Step 4

I’ve got a nonstick frying pan heating up on the stove and to that I’m just going to add a little bit of coconut oil to prevent my french toast from sticking and all I’m going to do is give it a dip on each side make sure it’s well coated and then pan it goes

I’m going to fry it up until it’s nice and golden on both sides and then it’s ready to serve I like it served best with some lovely strawberry sauce which really could not be easier to make

Step 5

In a small saucepan I’m combining a whole lot of strawberries with a squeeze of fresh lemon juice and a little bit of coconut sugar I’m going to simmer this mixture over medium heat for about ten minutes or until it turns into syrupy saucy goodness and then I’m going to pour it all over that glorious french toast breakfast is served

Guys I know some of you are going to be a little bit skeptical but I really hope you will give this one a try yourself it’s actually become one of my very favorite french toast recipe.

 

Veggie Casserole Breakfast

So I’m going to show you a vegetarian breakfast casserole it’s really easy to put together but also incorporates a ton a beautiful fresh veg to add lots of flavor to this brunch recipe

Ingredients –

  • 1/2 Cup – Milk
  • 1 tbsp – Oil
  • 8 – Eggs
  • 1 – Red Onion Diced
  • 1 Cup – Smoked Gouda, Grated
  • 1 – Red Bell Paper, Diced
  • 4 Cups – Baby Spinach
  • 1 – Yellow Bell Paper Diced
  • 2 tsp – Smoked Paprika
  • 1 Cup – Cremini Mushrooms, Quartered
  • 1 Clove – Garlic, Minced
  • 5 – Vegetarian Sausages, Slice
  • Salt and Pepper

Directions –

Step 1

I’m actually going to be using some vegetarian sausage that I’ve just given a quick chop to I’ve got some oil heating up in a skillet on the stove and to that, I’m going to add my veg so I’ve got some coarsely chopped red onion some bell pepper some mushrooms and my vegetarian sausage I’m just going to cook that all up in my skillet until it’s nice and soft and those mushrooms have released all of their moisture

Step 2

For easy breakfast recipes with eggs , I’m going to flavor it further with a little bit of minced garlic and some smoked paprika finally I’m going to add some baby spinach and stir it all up until it’s completely wilted now that my beautiful sausage of veg is all cooked up we are going to set it aside 

 

Step 3

For easy breakfast recipes with eggs , I started on my egg mixture I’ve got about eight eggs standing by and that I’m going to add some milk you wanted to make this a little richer you could do this with cream then we’re going to season our eggs with some soul and some pepper and then we’re going to give this all a nice whisk I’m just going to pour this egg mixture all over my veggies

Step 4

Then I’m going to top it all off with some grated smoked gouda if you don’t have smoked gouda you could also do this with some shredded cheddar cheese that would work as well into the oven this is going to go at 350 degrees Fahrenheit for between 20 and 25 minutes or until those eggs are set completely 

I’m just going to sprinkle it with a little more smoked paprika then all you need to do is slice it up and it is ready to enjoy.

Today I’m going to show you a classic ham and Swiss version of my baked eggs and then once you’re done now let’s get started with our classic ham and Swiss baked eggs

  • 2 – Green Onions, Finely Chopped
  • 1tsp – Butter/Oil
  • 1/2 Cup – Swiss Cheese, Shredded
  • 2 – Large Eggs
  • 1 Cup – Ham, Chopped

 

Directions –

Step 1

For this recipe I’m using a small oven-safe baking dish now you can find these at kitchen stores or big-box stores but I actually bought mine at a restaurant supply store which I find much much cheaper 

We’re going to get started simply by greasing our dish I’m doing this with just a little bit of vegetable oil but you could also do this with some butter if you wanted to

Next I’m going to layer in some chopped ham some shredded Swiss cheese and some finely chopped green onion as you can see I’ve left a little well in the center because that is where my egg goes  I’m going to season this all with some salt and some pepper

Then into the oven it goes at 425 degrees Fahrenheit for about 10 minutes or until your egg is cooked to your liking I’m going to finish it off with a little more finely chopped green onion and serve it of course with some toast for dipping in my house it’s all about the light ride choice but you go ahead and use whatever kind of toast you like

Holy crap everybody welcome, French crepes remain one of the most perplexing culinary creations in the food world and it’s really sad because the fact is they’re actually very simple to make as long as you follow these easy steps

Ingredients –

  • 1 Cup – Flour
  • 2 – Eggs
  • 3 tbs – Melted Butter
  • 3/4 Cup – Milk
  • 1/2 Cup – Water 

Directions –

Step 1

For Tasty breakfast recipes, the first secret to making the perfect crepe is to have a great go-to recipe what I love about this recipe is that it can all be mixed up in your blender if you don’t have a blender don’t sweat it you can also do it by hand with a blender does such a great job makes it totally effortless all right

so we’re going to start off with two eggs then we’ll add 3/4 of a cup of milk a half a cup of water and then three tablespoons of melted butter don’t hold back we’re not using margarine here and finally, you’re gonna add a cup of flour then put the lid on and blend it all up for a sweet crepe you can opt to add some sugar vanilla and The Cure and for a more savory crepe some chopped fresh herbs and a little bit of salt will make it very nice salty batter

Now this menu features one of my very favorite French foods the crepe now if you’re not familiar with how to make crepes you should definitely check the previous recipe, what I love about crepes though is that they actually refrigerate and freeze really really well so I need these a few days ago and I’m just going to heat them up in the oven really quickly and they’re going to be the base for our delicious menu into our crepes

For Tasty breakfast recipes, we’re going to be adding caramelized bananas now they’re super simple to make and they are absolutely delicious they’re sweet they’re soft and they’re actually perfect over just about anything we’re going to turn our heat to medium-high
